A great classic in the Tunisian pastry cuisine, Tunisian Ramadan makroudh Pastries is considered as the pastry hero in the holy month of Ramadan, Tunisians tend to serve it as a dessert every night in Ramadan.
Ramadan makroudh Pastries
This recipe is very simple and based on semolina flavored with olive oil and orange blossom with a subtle date filling.
Ingredients
- 1 pound of semolina, fine or medium
- 1 Pound of dates paste
- 1/2 Pound of soft butter
- 1 Cup of orange blossom water
- 1 Cup of honey mixed with 1/2 glass of water
- 1 pinch of cinnamon powder
Instructions
- Preheat the oven to 180 ° C/360°F.
- Put the semolina in a pastry mixer or in a large bowl; then add in the soft butter and form a dough
- Knead the dough very well; then add in the salt, the cinnamon powder, clove powder, and little by little quantity of the orange blossom water
- Knead the dough for about 10 minutes or until you get a consistent thick dough.
- Roll out this dough in a layer of about 1.5 cm thickness; then give it a make pastries of rectangular shape.
- Cover the dough with the date paste, then roll this rectangle on itself, cut it into slices at 4 to 5 cm.
- Draw lines on the top of the slices with a fork and lay them flat on a baking sheet lined with parchment paper.
- Bake for 20 minutes.
- When cooked, place the makroudh on a serving platter and drizzle with honey syrup.
- Serve and enjoy your makroudh warm or cold!
