Carrot Pineapple Cake is a delicious Middle Eastern moist cake containing crushed pineapple and freshly grated carrots. It’s all topped off having a glossy sleek cheese icing and a few crunches cooked coconut flakes.
Carrot Pineapple Cake
Ingredients
- 2 cups all purpose flour
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 package cream cheese
- 1 teaspoon Salt
- 2 cup teaspoons ground cinnamon
- 1 cup vegetable oil
- 1 package cream cheese
- 1/4 cup butter
- 2 cups confectioners sugar .
- 3 eggs
- 2 cups shredded carrots
- 1 flaked coconut
- 1 chopped walnuts
- 1 can crushed pineapple
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 175 c.
- Grease and flour the pan.
- Mix flour, baking soda, baking powder, salt and
- cinnamon. In the center add sugar, oil, eggs and
- vanilla. Mix with wooden spoon until smooth.
- Add carrots, coconut, walnuts and pineapple.
- Pour into the pan. Bake at 175 c for about 45
- minutes. Don't panic, the center will shrink a little.
- Allow to cool.
- To cover, mix butter and cream cheese until everything becomes smooth
- Add the confectioners' sugar and beat until it becomes creamy
