Ingredients
  

  • For the pancake batter :
  • 2 cups of all purpose flour
  • 1/2 cup of powdered milk
  • 2 1/2 cups of water
  • 1 packet of baking powder
  • 1 teaspoon of orange blossom water
  • For the Milk cream:
  • 2 cups of powdered milk
  • 3 cups of water
  • 1 tbsp orange blossom
  • 3 tablespoons of flour
  • 3 tablespoons of caster sugar
  • For the syrup:
  • 2 cups of water
  • 3 cups of sugar
  • 1 tablespoon of lemon juice
  • 2 tablespoons of orange blossom water
  • 1 cup of crushed or ground pistachios

Instructions
 

Prepare the pancakes:

  • In a bowl put the powdered milk, the flour and the baking powder
  • Make a well and pour in the water and the orange blossom
  • Mix your ingredients very well so as not to make lumps.
  • Set your mixture aside for about 30 minutes for the dough to rise and thicken.

Prepare the cream:

  • In a saucepan, combine the powdered milk with the flour and the sugar.
  • Make a well and pour in the water and the orange blossom
  • Put the saucepan on a medium heat and stir until the cream thickens.
  • Pour into a bowl and set aside.
  • In a pre-oiled and heated non-stick pan. Pour small circles of dough with a tablespoon
  • Bake on one side for 1 to 1 1/2 minutes so that the top of the dough does not run off.
  • Remember to grease the pan every time.

Prepare the syrup:

  • Mix all the ingredients; then let boil for about 10 to 15 minutes.
  • During this time, stuff each round of dough with the milk cream.
  • Fold to form a cone by pinching the edges of the pancake (on the top of the cone).
  • Sprinkle with crushed pistachios and sprinkle with a drizzle of syrup.
  • To finish
  • Placethe Ayatef to cool in the refrigerator until the pancakes are cold.
  • Serve and enjoy your Atayef
