Ingredients
  

For the dough

  • 1 Cup of fine semolina
  • 1 Cup of coconut
  • 1/2 Cup of sugar
  • 1/4 Teaspoon of ground mastic
  • 1/2 Teaspoon of baking powder
  • 1/4 Cup of dried powdered milk
  • 1/2 Cup of corn oil
  • 1/2 Cup of cream cheese
  • 2 Large eggs
  • 1 Teaspoon of vanilla extract

For the filling:

  • 1 Cup of mozzarella cheese
  • 1/2 Cup of cream cheese

For the topping:

  • 2 Cups of syrup
  • 1/2 Cup of ground pistachios

Instructions
 

  • Preheat your oven to about 180°F
  • Use coffee cups, grease and wipe them with butter and then put them on a suitable tray.
  • Prepare the basbousa mixture and to do that; in a deep bowl, put the semolina, the coconut, sugar, mastic, baking powder, milk, oil, cream, eggs and vanilla, using a wooden spoon to stir very well together.
  • Set the mixture to rest for 15 minutes.
  • Put about a tablespoon of the mixture in each cup.
  • Put a little cheese and cream over the mixture.
  • Place the baking tray with the coffee cup in it in a preheated oven
  • Bake the cheese basbousah for 20 minutes
  • As soon as you take it out of the oven directly, spread some syrup on top
  • Sprinkle the cheese basbousa with pistachios, then serve and enjoy!
