Boil the vermicelli (noodles), in a saucepan containing boiling water, adding salt and oil to it, until it reaches a slightly pre-ripening stage.
Drain the noodles, and rinse with cold water.
Melt the butter, in a saucepan over the fire, and place the boiled vermicelli, then sugar, cardamom, and soaked saffron
Gently drain until the sugar melts and the ingredients are mixed.
Cover the pot with a towel; then beat the eggs in a bowl, and set the latter aside.
Add a little oil to a saucepan, and put the latter on the stove.
When the oil is heated up, fry the onions with turmeric, with the addition of salt and pepper to taste.
When the onion wilts, pour a third of the amount of the egg mixture in order to obtain a thin pie and fry the last on both sides. Repeat the steps until you get three pies.
Place the vermicelli mixture on a serving dish, and sliced egg muffins on top.
Serve hot and enjoy!
