Ingredients
  

  • 1 bag of Vermicelli or noodle
  • one and a half cups of sugar
  • 1/2 teaspoon of salt
  • 1 tablespoon of vegetable oil
  • 2 tbsp of butter
  • 1/2 teaspoon of ground cardamom
  • A little quantity of saffron; soaked in a quarter cup of rose water
  • 3 Eggs
  • 1 Onion medium size / chopped
  • 1 teaspoon of Turmeric

Instructions
 

  • Boil the vermicelli (noodles), in a saucepan containing boiling water, adding salt and oil to it, until it reaches a slightly pre-ripening stage.
  • Drain the noodles, and rinse with cold water.
  • Melt the butter, in a saucepan over the fire, and place the boiled vermicelli, then sugar, cardamom, and soaked saffron
  • Gently drain until the sugar melts and the ingredients are mixed.
  • Cover the pot with a towel; then beat the eggs in a bowl, and set the latter aside.
  • Add a little oil to a saucepan, and put the latter on the stove.
  • When the oil is heated up, fry the onions with turmeric, with the addition of salt and pepper to taste.
  • When the onion wilts, pour a third of the amount of the egg mixture in order to obtain a thin pie and fry the last on both sides. Repeat the steps until you get three pies.
  • Place the vermicelli mixture on a serving dish, and sliced ​​egg muffins on top.
  • Serve hot and enjoy!
