Eid Balaleet

Ingredients
- 1 bag of Vermicelli or noodle
- one and a half cups of sugar
- 1/2 teaspoon of salt
- 1 tablespoon of vegetable oil
- 2 tbsp of butter
- 1/2 teaspoon of ground cardamom
- A little quantity of saffron; soaked in a quarter cup of rose water
- 3 Eggs
- 1 Onion medium size / chopped
- 1 teaspoon of Turmeric
Instructions
- Boil the vermicelli (noodles), in a saucepan containing boiling water, adding salt and oil to it, until it reaches a slightly pre-ripening stage.
- Drain the noodles, and rinse with cold water.
- Melt the butter, in a saucepan over the fire, and place the boiled vermicelli, then sugar, cardamom, and soaked saffron
- Gently drain until the sugar melts and the ingredients are mixed.
- Cover the pot with a towel; then beat the eggs in a bowl, and set the latter aside.
- Add a little oil to a saucepan, and put the latter on the stove.
- When the oil is heated up, fry the onions with turmeric, with the addition of salt and pepper to taste.
- When the onion wilts, pour a third of the amount of the egg mixture in order to obtain a thin pie and fry the last on both sides. Repeat the steps until you get three pies.
- Place the vermicelli mixture on a serving dish, and sliced egg muffins on top.
- Serve hot and enjoy!
