Preheat oven to 175 c.
Grease and flour the pan.
Mix flour, baking soda, baking powder, salt and
cinnamon. In the center add sugar, oil, eggs and
vanilla. Mix with wooden spoon until smooth.
Add carrots, coconut, walnuts and pineapple.
Pour into the pan. Bake at 175 c for about 45
minutes. Don't panic, the center will shrink a little.
Allow to cool.
To cover, mix butter and cream cheese until everything becomes smooth
Add the confectioners' sugar and beat until it becomes creamy
