Ma’amoul Cookies

This recipe is one of the most important manifestations of celebration and joy accompanying Eid Al-Fitr, and is usually prepared during the last days of Ramadan.

Ingredients
  

-- For the dough :

  • 1 cup semolina flour
  • 2 cups all purpose flour
  • 1/2 tbsp baking powder
  • 1/4 cup milk
  • 1 tbsp orange blossom water
  • 2 sticks (240 gr) butter, at room temperature

--Filling :

  • 8 medjool dates, pitted
  • 4 fresh figs,
  • 1 cup walnuts, without shell
  • 1 tbsp orange blossom water
  • 1/4 cup sugar
  • 5 tbsp cinnamon powder
  • 1/4 cup icing sugar
  • 1 tbsp vegetable oil

Instructions
 

  • To prepare the dough: combine the semolina, flour, all purpose flour and baking powder in a large bowl, mix well.
  • Add the milk, butter and orange blossom water to the dry ingredients and combine them well until dough is formed.
  • Place the dough in a fridge for 20 minutes.
  • To make the filling, place the dates, figs and walnuts in a food processor and blend until a fine ball is formed.
  • Remove from the food processor, add cinnamon, orange blossom water and sugar and set aside. For the Ma'amoul cookies preparation: roll the dough to make small balls.
  • Poke a little hole in each ball with your finger and place some fillings inside them. Close opening until all the filling is concealed.
  • Take cookie mold and wipe down with some vegetable oil so that the dough does not stick with the mold.
  • Press the balls in the mold and then tap down the cookie by hitting the mold on the side.
  • Place the ma'amoul cookies on a baking sheet and bake them for about 20 minutes until the bottom of the cookies become light brown.
  • When the cookies are baked , remove them from oven and allow cooling on a cooling rack
